What do a 3 Star Michelin Restaurant and a local eater have in common?

Answer-they both use stainless steel in their kitchen, in one shape or another. The world of professional cooking is a vigorous and every so changing and demanding world. From preparing the perfect cocktail, to pleasing the customer with small works of art, and of course to serving them a most memorable dessert. All and many more of these examples would not be possible and hygienic without the participation of Stainless steel.

Let’s view this idea as if you just had a long day at work, and just want to sit down and enjoy a great diner with no worries. You begin with a cocktail, a cold vodka martini which was possible by the stainless steel ice box, and the stainless steel shakers which chilled your cocktail at a rapid speed without diluting it. Before, this same cocktail would have been stirred, diluted, and not reach the ice cold feeling you are enjoying today.

Dinner has arrived! It is a perfectly poached Salmon with seared tomatoes and reduced vinegar glaze on top. A small work of art, and yet again this perfectly balanced dish would not have been possible without the assistance of stainless steel appliances. Since stainless steel holds on to temperature very well, and it is not affected by acids such as tomatoes, or vinegar; this dish you are taking pictures of and twitting about, could not have been possible without the help of stainless steel pots and pans.

Finally dessert; a curious pairing of frozen ice creams sitting on top of a variety of fried fruit, both curious and intricate. Again, difficult without the help of stainless steel appliances such as: the deep fryer and ice cream maker. Your experience has come to an end, and you leave with a smile on your face. You leave thanking everyone, except one silent participant, but it is ok, those pots and pans will be waiting for you for many years come.

The Father of Stainless Steel

Many great inventions in life come from complete mistake or accident, the world of metal is no stranger to this effect. The most popular and widely used stainless steel is one of the best examples to this outcome. Although at first intended to perfect a gun, this metal went on to change the world for ever. Throughout time, metallurgists-individuals who study the physical and chemical aspect of metal were stuck on the problem of rusting. Ironically the discovery of stainless steel came in form of a gun.

image

The story goes, that in 1912 a metallurgist by the name of Harry Brearly from Sheffield was trying to improve the then used pistol to make it better. Most gun barrels are grooved – or “rifled” – in a spiral pattern that causes the bullet to spin, increasing accuracy. But the friction between the bullet and the barrel causes wear, eventually making the barrel too big for the bullet. Brearley wanted to develop a steel alloy that would resist erosion.

image

The story continues after several months of trial and error he began to collect a massive pile of steel scraps. One day Brearly noticed that one of his failed scrap was still shiny and maintained its structure while those around it had rusted. This at the time “failed” scrap contained about 12% chromium unknowingly had reacted with the oxygen in the air to form a thin protective cover. At the time Brearly dubbed his invention “rustless steel”.

image

Since Brearly hometown was known for manufacturing cutlery, he immediately saw an opportunity to test his new invention. He met up with an old schoolmate by the name of Ernest Stuart who at the time was a manager at Mosley’s Portland Works. After a serious of test, Stuart named it “stainless steel”-since then the name never changed. It is incredible to think today how we could live without the assistance of stainless steel. It’s everywhere we look, hell it’s holding the very chair I’m sitting on right now.

Here at Shanghai Metal Corporation we have taken this valuable and important invention and given it different applications. Did You Know There Are 14 Kinds Of Spoon?

Lost and Confused Signpost

Have you ever been invited to a really fancy restaurant and been lost with the rules? Maybe you would like to host a fancy or themed dinner party but it seemed a lot of work?

Visio-Drawing1

Cutlery can get complicated– for example each of the fourteen spoons has a different use – the obvious teaspoon, to the obscure five o clock spoon which is apparently for afternoon tea.  Then there’s the place setting and the etiquette – just remember with cutlery work from the outside inwards, course by course. Worst case you can bring this along:

Etiquette-Placemat1

Another thing that can get confusing is which cutlery to even buy – should you impress with silver or invest in stainless steel?  When it comes to flatware, some metals require more care than others. Sterling silver and silver plate tarnish, whereas stainless steel is comparatively easy to care for. Sterling silver cutlery is easily cared for using vinegar, bicarbonate of soda, olive oil or lemon juice.

Regarding pricing, stainless steel can vary depending on quality i.e. nickel content. This is shown by the depiction 18/10, 18/8 or 18/0 where the second number is the nickel percentage – the higher it is the better quality. So ultimately stainless steel cutlery can give both the finish and affordability you need for your big night.
